Reese's Cake

For the Cake:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup Hershey's cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda 

3/4 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water


 Directions:
Heat oven to 350. Grease and flour two 9 inch round baking pans or  a 9x13 glass casserole dish. Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in a large bowl. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans. Bake 30-35 minutes. Let cool. Add frosting.


For Frosting:
1 stick of butter, softened
1 cup creamy peanut butter 

6 tablespoons milk
2 cups confectioners sugar

4-6 Reese's Cups frozen

 Directions:
Use an electric mixer to mix butter and peanut butter in a medium bowl. Alternately and slowly add milk and sugar. Beat for about 3 minutes or until it fluffs. Frost cake after it has cooled. Crumble Reese's and add to top of frosting.

Low Carb Breakfast Cups

6 slices of ham
3 Eggs
1/2 cup shredded cheese
1/4 cup milk
Salt and pepper

Preheat oven to 350. Scramble eggs with milk, salt and pepper. Spray muffin pan with cooking oil. Place the meat in as picture and add cheese. Pour egg mixture over cheese and bake for 20-25 minutes.

My next batch will have baby spinach and maybe bell peppers.

Note: Makes for a quick breakfast in the car on my way to school in the mornings!
