Low Carb Breakfast Cups

6 slices of ham
3 Eggs
1/2 cup shredded cheese
1/4 cup milk
Salt and pepper

Preheat oven to 350. Scramble eggs with milk, salt and pepper. Spray muffin pan with cooking oil. Place the meat in as picture and add cheese. Pour egg mixture over cheese and bake for 20-25 minutes.

My next batch will have baby spinach and maybe bell peppers.

Note: Makes for a quick breakfast in the car on my way to school in the mornings!
