Italian Sausage and Pasta Casserole



Ingredients:
1 lb Italian Sausage
1 Zucchini
7 oz penne pasta uncooked (3/4 box)
1/2 cup cheddar jack cheese (grated)
1 Jar spaghetti sauce

Cook pasta until done but still slightly firm. Brown sausage and remove from pan, leaving the grease in pan. Slice zucchini into thin quartered pieces and saute them until tender in the grease from sausage. If you need more grease add 1 tsp olive oil. Mix sauce, sausage, and zucchini together. Cook together on medium for 5 minutes. Remove from heat. Gently mix the meat mixture and the pasta together. Add 1/4 cup cheese into mixture. Pour into casserole dish and add the other 1/4 cup of cheese to the top of the casserole. Bake at 450 for 15-20 minutes.




It was so good that the kids didn't pick out the zucchini! A win for our house!
I took my sister on her first couponing trip with me and we bought a ton of pasta. This recipe was a successful attempt at something new and to also decrease my pasta stock. I hope you all like it too!

Simple and Fast Cheese Quesadillas

Ingredients: 
2 string cheese sticks 
1 flour tortilla 
1 tsp Butter 

Directions: Cut up cheese sticks and put the pieces evenly on half of the tortilla. Butter a frying pan, turn stove eye on med-high heat, fold the tortilla in half and carefully place the quesadilla in frying pan. When cheese melts enough to stick, flip quesadilla. Cook until both sides are golden brown. Cut into strips and serve! Very kid friendly and easy recipe! You can easily add veggies or meat to your liking.

Best Way to Cook Frozen Green Beans

1 Package of frozen green beans
2 Tablespoons olive oil
1 Clove minced garlic
1 tsp salt
1/2 tsp pepper
1/4 tsp dry rosemary
2 Tablespoons water

Add package of green beans to skillet. Stir in all ingredients except water. Cook on medium/high until the beans start to soften then add water. This helps from scorching the beans and adds steam to cook faster. Saute for about 20-30 minutes or until beans are tender to your liking.
*I forgot to add rosemary to the picture but its an important element so don't forget it!
